i knew i needed to get through some produce that's been sitting in my fridge. so i remembered an eggplant some friends gave me...i paired that with some recently acquired tomatoes...and an onion. nom nom nom.
it's currently cooking. and i'm waiting. it was refreshing to see the vibrant colors of the eggplant and the tomatoes. :) i can't wait.
